I'm the terms of selfie camera(for videos), the Winner is S21 Ultra.
This is because the "Skin Tones" in S21 Ultra are very Natural when Sunrays fall in the face directly
Whereas this natural tone isn't seen in iPhone 12 Pro.
B) Photos

Skin Tones are Consistent and closer to natural in iPhone 12 Pro.
But

Colors : The colours are almost the same in both the Flagship Smartphones.
Difference is that,
S21 gives more cooler images(preferred if you want the sky to look more brighter)
Whereas,
iPhone 12 Pro gives somewhat Warmer images.
Plus➕ point : The colours in S21 are already boosted so there is no need for editing
Whereas,
iPhone images will require some editing.
Contrast : Contrast is more in S21 along with the colours so, the Punchiness of image is felt more
Whereas,
the images in iPhone 12 Pro are felt flat.
Highlights : Highlights are better managed in iPhone 12 Pro than S21 that causes white parts of image to be Over Exposed.
Dynamic Range : The Dynamic Range is better in S21,i.e, if the sun is behind the subject subject
S21 Ultra's camera exposes the dark parts and also manages the highlights much-much better than iPhone 12 Pro.
